The difference is where your emails are stored. IMAP messages are downloaded to your local email client and synced with the email server (in this case Gmail). On the other hand, POP only downloads a copy of your emails to your local email client. It does not send new messages to the mail server.
IMAP receives messages from your email server and downloads them to you. SMTP, on the other hand, is for sending emails from a sender (you) to another email server.
