Gmail IMAP is where you want to download your Gmail emails to your computer’s email client, such as Outlook. IMAP downloads messages and syncs your changes to Gmail’s servers so everything stays the same.

The difference is where your emails are stored. IMAP messages are downloaded to your local email client and synced with the email server (in this case, Gmail). So when you send a message in Outlook, that message is sent to Gmail’s servers to be placed in your Sent folder. POP, on the other hand, simply downloads copies of your email to your local email client. It does not send new messages to the email server.
IMAP retrieves messages from your email server and downloads them to you. Meanwhile, SMTP is for sending email from the sender (you) to another server.
